First Snowwww!

ok i officially have the christmas spirit.... i feel like it's slightly different than the "holiday spirit" though, you know? it's less pumpkin-pie and peace-on-earth and more mistletoe and mystery! last night i met up with katie after work and we got hot chocolate and wandered around the first-friday scene in old city.... the street venders were scarce but the galleries were in full-swing. we also caught a beautiful choir performance outside christ's church which was an unexpected bonus! listening to them sing i swear i fell back into like the 1800s or something...... that church is so beautiful, it's timeless...
soooo then we just got dinner at old city pizza and went to meet up with some other people but i ended up goin home early and watching some tv. this morning i did aaaaaaabsolutely nothing and i'm reveling in it.... it's 4:00 pm and i'm still in my pjs! well that's not true, i didn't do nothing- i baked cookies for jenny's christmas party tonight (recipe below), and i did lots of laundry and knit while watching love actually which is one of my all time fave movies :).... oh and i also baked a chocolate chip banana bread right when i woke up which is soooo yummy- i like to toast it and smear it with cream cheese usually, but right now it's warm so the cream cheese just melts without even toasting it yummmmmmmm...... ANDDD THEN, to make things more wonderful, we got our first snow!!! it's not supposed to accumulate but it's still beautiful- the flakes are HUGE! i went out to smoke a ciggarette on my front stoop and the street was so quiet and perfect. i loveeee the city when it's snowing...
so here are the cookies i made... i call them: shortbread-almond-jam-thumbprint-things and they are DELISHHHHH.......
1/2 cup soft butter (make sure it's softened to room temp)
1/4 cup brown sugar1 egg (separate the yolk and the white)
1 cup flour
1/4 tsp. salt
1/2 tsp. vanilla
a sprinkle of cinnamon or nutmeg if you like
crushed almonds (maybe like 1/2 a bag or so)
- preheat oven to 375 degrees
- beat together everything except the egg white and almonds. it's kinda hard to mix because it's very dry at first so using your hands helps.
- roll into little tiny balls (maybe like a little smaller than an inch)
- slightly beat the egg white
- dip each little ball in the egg white and then roll it in the crushed almonds
- place about 1 inch apart on a cookie sheet lined with tin foil or parchment paper
- bake for like 3-5 mins
- remove from oven and quickly press your thumb gently on top of each cookie (gently, but deeply enough to make a deep indent- i used to make mine too shallow and then the jam doesn't sit well later)
- return to oven and bake until golden brown- about 8-10 more minutes.
remove from oven and drop about a teaspoon of jam (i like strawberry, but most people do raspberry... try strawberry!) into each thumbprint
- let them cool, and enjoy!
okee now off to shower and get dressed and head over to jennys!
